
Kids Kedgeree
Serves 2
Ingredients:
1 medium onion diced
200g long grain rice (rinsed)
275ml milk
275ml water
200g smoked haddock or cod (diced small)
50g frozen peas
1 fresh mango diced (optional)
1tblsp “korma” curry powder
½ chicken stock cube
60g butter
Method:
1. Over medium heat fry onions until soft.
2. Add rice and curry powder.
3. Stir in the milk, water and stock cube.
4. Cover with a tight fitting lid and simmer for 10 minutes.
5. Add fish and cook for a further 2 minutes
6. Add peas, mango and butter then stir for 2 minutes.
7. Serve in a warm bowl.
